Why Does HPP Baby Food Taste as Fresh as Homemade?



Hello OFarm Fans! My name is Ari Raz and in case we haven’t met; I have the distinct honor of being the cofounder and CEO of this fine company.  I thought it would be fun to write a little bit about why our HPP baby food is much more delicious and differentiated from all other fruit and veggie squeeze pouches on the market. Have you been sneaking some of our pouches away from your little one for yourself? Besides containing unique blends with healthy fats and superfoods you won’t find in other pouches (Apple, Carrot, Beet, Ginger, Flaxseed anyone?), we are the first baby food ever to leverage a cutting edge technology called High Pressure Pascalization (HPP).

HPP (or Cold Pressure Processing) is the process that allows Once Upon a Farm to produce the freshest tasting fruit and veggie blends on the planet!

Have you ever noticed how certain products in your grocery store have started to look and taste fresher over the past 5 years? Lots of brands you may have heard of, including Suja Juice, Holy Guacamole, Hope Humus, Blueprint Juice, Applegate Farms and Evolution Juice use HPP technology.

HPP is an incredible technology that destroys potential food borne bacteria and extends the shelf life of food by applying water pressure to the outside of the sealed packaging with the food inside (all without heat!). How much pressure you ask? Have you ever heard of the Mariana Trench? It is the deepest known part of the world’s oceans. The water column above the trench exerts 1000 times normal atmospheric pressure. An HPP machine exerts pressure that is more than 5x that of the Mariana Trench. Neat, huh? That pressure is powerful enough to destroy any potential food borne bacteria, and allows us extend the refrigerated shelf life a bit, without losing the flavors and nutritional value caused by traditional preservation methods.

Traditionally, most products in the grocery store undergo a process called High Heat Thermal Pasteurization to extend their shelf life. While this process keeps food safe from harmful food-borne bacteria, it also completely destroys the flavor, texture, nutritional value and color of fresh food. By thoroughly over-cooking the ingredients multiple times (and at least once in aluminum packaging - not good), heat pasteurization does a disservice to the food, and to the people eating it. 

Have you ever tasted a glass of heat pasteurized orange juice and wondered why it tastes so bland compared with freshly squeezed orange juice? As a child my father would make freshly squeezed orange juice with breakfast every Sunday morning, and that question frequently entered my mind as I drank store bought orange juice every other day of the week.

As I grew older, the same question entered my mind as I browsed the baby food section of my local Whole Foods. How was it possible for baby food pouches filled with fruits and vegetables to sit on an unrefrigerated shelf for months or years at a time without spoiling? With a little research, I learned that the same process that destroyed the flavor of orange juice was being used to a similar effect on every single one of those pouches and jars on the shelf. This process also concentrates the blends by heating them up, causing them to taste sweeter and more homogenized than fresh food. Have you ever had a visceral reaction to the thought of eating baby food? Once Upon a Farm was created to change your perception of what baby food can be.

So now that you know a little bit more about how we make our blends, please let us know what you think of them! Yes, I know it seems weird for me to try to encourage you to eat baby food, because that has sadly been the paradigm for the past 80 or so years (that baby food is this weird, gross substance) but I don’t think you will be disappointed, as this is real food for all ages. I go through 2 – 3 pouches myself daily. They make for a delicious, guilt-free snack, and are loaded with delicious organic ingredients. You may find yourself sneaking some of your baby’s food for yourself more often than you think!
